Crock Pot Vegetable Lentil Dal

Ingredients:

  • 2 tbsp coconut oil
  • 1 head of cauliflower
  • 3 cloves of garlic
  • 2 tsp tumeric
  • 2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 2 large carrots
  • 1 head of broccoli
  • 2 1/2 cups red lentils rinsed
  • 3 cups water
  • 1 can coconut milk
  • 2 tsp sea salt
  • Quinoa

Method:

Add all ingredients to crock pot (if desired, sauté onions and garlic first), cook on low for 6 hours.
