eLifestyle Easy Anytime Veggie Quesadilla

Ingredients:

  • 1 large whole wheat tortilla, cut in half
  • Stuffed with:
  • ¼ cup low-fat shredded cheddar cheese
  • ¼ cup black beans
  • ¼ cup corn
  • ¼ cup each sliced peppers & mushrooms, sautéed in olive oil

Prep:

  1. On a baking sheet, place 1 tortilla half. Pile with ingredients and top with the other tortilla half.
  2. Bake at 350º for 8-10 min.
