eLifestyle Easy Anytime Veggie Quesadilla

- 1 large whole wheat tortilla, cut in half
- Stuffed with:
- ¼ cup low-fat shredded cheddar cheese
- ¼ cup black beans
- ¼ cup corn
- ¼ cup each sliced peppers & mushrooms, sautéed in olive oil
- On a baking sheet, place 1 tortilla half. Pile with ingredients and top with the other tortilla half.
- Bake at 350º for 8-10 min.
